Zusammenfassung
Kasein gehört zu der Gruppe organischer Verbindungen, die man jetzt als Proteine bezeichnet und früher nach ihrem Hauptvertreter „Eiweißkörper“ nannte. Diese Stoffe sind zweifellos die kompliziertesten Verbindungen, mit denen der Chemiker zu tun hat, und das Kasein gehört dabei noch zu den schwierigeren, da es in die Gruppe der zusammengesetzten Phosphor – Proteine gehört.
