Zusammenfassung
Tierische und pflanzliche Fette erleiden unter dem Einfluß von exogenen und endogenen Faktoren Veränderungen verschiedensten Charakters. Am stärksten wirken sich diese Einflüsse auf Fette und Öle mit einem höheren Gehalt an ungesättigten Fettsäuren aus.
