Abstract

The gastrointestinal tract is the major site of antigenic contact in the body. A complex and precise gastrointestinal immune system allows the accomplishment of two distinct features: absorption of nutrients avoiding hypersensitivity to food antigens and exclusion of microbiologic pathogens (Kagnoee 1996; Newby 1984; Strobel 1990).
