Zusammenfassung

Geschmack und Geruch beruhen auf einer selektiven und hochempfindlichen Reaktion spezialisierter Sinneszellen auf die Anwesenheit der Moleküle bestimmter Verbindungen. Im weiteren Sinne sind spezifische Reaktionen auf Moleküle, etwa eines Hormons (s. S. 390) oder eines Neurotransmitters (s. S. 45) kennzeichnend für viele Zellen und Gewebe. Geschmacks- und Geruchssinneszellen arbeiten jedoch als Exteroreceptoren, deren Reaktionen auf Moleküle wichtige Information über Außenreize liefern, die in speziell zugeordneten Hirnarealen verarbeitet wird und zu Sinnesempfindungen führt. Andere chemoreceptive Zellen dienen als Enteroreceptoren, z.B. der Messung des CO2 (s. S. 606).
