Zusammenfassung
Der Name Phytochemie geht auf F. Rochleder zurück, der im Jahre 1854 ein Buch dieses Titels veröffentlichte. Die Phytochemie oder Pflanzenchemie befaßt sich mit den chemischen Strukturen der in Pflanzen vorkommenden Stoffe, vorzüglich der sog. sekundären Pflanzenstoffe. Sekundäre Pflanzenstoffe oder pflanzliche Sekundärstoffe sind Inhaltsstoffe von Pflanzen, die nur in bestimmten Geweben und Organen und in besonderen Entwicklungsstadien gebildet werden. Phytochemie ist in dieser Hinsicht ein Teilgebiet der deskriptiven Biochemie. Die Ergebnisse der Phytochemie können vergleichend betrachtet werden, und zwar in zweierlei Hinsicht: Man kann den Molekülaufbau der Pflanzenstoffe vergleichen, um zu einer Ordnung der Pflanzenstoffe zu gelangen (vgl. dazu Kap. 1.1.3); man kann aber auch die Verbreitung der Pflanzenstoffe über das Pflanzenreich studieren und mit den Ergebnissen der Taxonomie in Beziehung setzen. Die vergleichende Phytochemie im Dienste der Taxonomie bezeichnet man meist als Chemotaxonomie (vgl. Kap. 1.2.6).
