Alkohole enthalten eine oder mehrere OH-Gruppen im Molekül. Man unterscheidet nach dem Substitutionsgrad des Kohlenstoff-Atoms, das die OH-Gruppe trägt, primäre, sekundäre und tertiäre Alkohole und nach der Anzahl der OH-Gruppen ein-, zwei-, drei- und mehrwertige Alkohole.
