Zusammenfassung
Die Wirkungen von Heilpflanzen, Gewürzen, Tees und Lebensmitteln werden in der Naturheilkunde seit der Antike genutzt. Andererseits zeigten sich bei einseitigem Einsatz von bestimmten Futtermitteln in der Tierzucht erhebliche Schäden. Der Vermutung, dass bestimmte Pflanzeninhaltsstoffe je nach Dosierung gesundheitsfördernde oder gesundheitsschädigende Wirkungen haben, konnte erst mit der Entwicklung hochempfindlicher Analysemethoden näher nachgegangen werden. So kam es zur Isolierung und Charakterisierung organischer Moleküle, die als bioaktive Substanzen bezeichnet werden. Auf diese Weise wurde es möglich, die gesundheitsfördernden Aspekte in Zell- und Gewebekulturen sowie Tiermodellen zu untersuchen. Inzwischen liegen auch zahlreiche epidemiologische Daten vor, die auf das umfangreiche Gesundheitspotenzial dieser Substanzen auch beim Menschen hinweisen und es sehr wahrscheinlich machen.
