Zusammenfassung
An die Zellbestandteile mit Eiweißstruktur sind alle Lebensvorgänge in besonderem Maße geknüpft: überall, wo Zellen wachsen und sich teilen, sind Eiweiß -körper als Träger dieser Phänomene im Spiele. Im Tierreich bilden sie außerdem wichtige Gerüstsubstanzen. Im Gegensatz zu der zentralen Bedeutung der Eiweiße in der Biologie, im Gegensatz auch zu ihrer Bedeutung in der Organotherapie (s. Insulin und andere Hormone) und in der Immunotherapie, steht ihre bescheidene Rolle in der Phytotherapie. In dem vorliegenden Rahmen werden daher einige allgemeine Eigenschaften der Eiweiße beschrieben, während auf eine besondere Gruppe von Proteinen, auf die medizinisch-pharmazeutisch benutzten Enzyme, näher eingegangen wird.
