Der Aminosäurestoffwechsel ist von großer medizinischer Bedeutung, so z. B. durch Proteinbiosynthese und Abbau, Umwandlung des C-Skeletts von Aminosäuren zu amphibolen Zwischenprodukten, Harnstoffsynthese und die Bildung einer Vielzahl physiologisch aktiver Verbindungen, wie beispielsweise neurogener Amine aus Aminosäuren (Abb. 20.1).
