Zusammenfassung
Chemisch betrachtet sind Aminosäuren a-Aminocarbonsäuren, also organische Säuren mit einer Carboxylgruppe -COOH, die zusätzlich noch über eine Aminogruppe -NH2 verfügen. Der griechische Buchstabe α bezeichnet dasjenige Kohlenstoffatom, an das die Säuregruppe -COOH gebunden ist. Anders als bei den uns bereits bekannten Carbonsäuren finden wir an diesem α-C-Atom bei Aminosäuren eine weitere funktionelle Gruppe, die Aminogruppe -NH2. Am α-C-Atom einer jeden Aminosäure sind also die beiden sie definierenden Gruppen gebunden, so daß sich bei physiologischem pH-Wert die allgemeine Formeldarstellung in Abb. 2.1 ergibt.
