Abstract

In this volume, we have tried to bring together various topics and authors who have expertise and insight into the different aspects of the factors that drive food choice, particularly within the context of European populations, where long histories of cuisine, culture, and diversity of ingredients have produced a complex set of factors which impact on individual decisions about what foods to eat.
