Abstract
The object of genetic improvement of industrial yeast is to modify the genome of the yeast so that the process is more efficient and/or the product is more desirable and useful. The oldest method is random selection of strains of the original culture and testing them for improved performance. No attempt is made to investigate the changes in the genome itself.
