Zusammenfassung

Die Eiweißstoffe oder Proteine sind aus Aminosäuren aufgebaut, die durch Peptidbindungen Open image in new window aneinandergeknüpft sind. Die resultierende Polypeptidkette bildet das Grundgerüst aller Eiweiße. Sie weist Verzweigungen auf und ist innerhalb des Moleküls in gesetzmäßigen räumlichen Strukturen angeordnet. Ferner sind an Seitenketten oft andere chemische Gruppen angehängt, besonders häufig Kohlenhydrate, deren Menge außerordentlich verschieden ist. Diese „zusammengesetzten“ Eiweißkörper werden vielfach als „Proteide“ von den nur aus Aminosäuren aufgebauten „einfachen Proteinen“ abgegrenzt. Eine solche Unterscheidung (die übrigens auf das deutsche Sprachgebiet begrenzt ist) scheint uns weder von wesentlicher Bedeutung noch immer streng durchführbar; wir werden darauf verzichten und durchwegs von „Proteinen“ sprechen, also auch von Glykoproteinen, Lipoproteinen usw. [61].
