Zusammenfassung
Essen ist ein integrales Element des täglichen Lebens und nimmt auch eine bedeutende Rolle in der Kultur eines Landes ein. Verschiedene Aspekte von Essen beeinflussen die Identität einer Destination, Region oder eines Landes, haben Auswirkungen auf den Anbau, die Produktion und die Konsumation von Nahrungsmitteln und die Frage der Nachhaltigkeit.
Im Tourismus war und ist die Gastronomie durch die Konsumation von Speisen und Getränken seit jeher Bestandteil touristischer Erscheinungsformen. Über lange Zeit jedoch wurde die Konsumation von Speisen und Getränken während einer Urlaubsreise lediglich als bloße Zurverfügungstellung für Touristen in Restaurants und Hotels betrachtet. Erst Ende der 1990er-Jahre hat sich diese Wahrnehmung dahingehend geändert, als die Gastronomie immer mehr als unverzichtbares Element der Kultur und Identität einer Destination oder Region wahrgenommen wird.
In Kap. 4 wird diskutiert, wie eng die Bereiche Tourismus und Gastronomie miteinander verwoben sind, welche Merkmale das Konzept des „Culinary Tourism“ aufweist und wie sich die beiden Bereiche entwickeln.
