Zusammenfassung
Eine Emulsion ist ein System, das zwei flüssige Phasen enthält, von denen die eine in Form von Kügelchen in der anderen verteilt ist. Die Flüssigkeit, die die Kügelchen bildet, wird als disperse Phase bezeichnet, während man die Flüssigkeit, die die Kügelchen umgibt, geschlossene Phase oder Dispersionsmittel nennt. Die beiden Flüssigkeiten, die nicht mischbar oder nahezu nicht mischbar sein müssen, bezeichnet man als die innere bzw. äußere Phase.
