Zusammenfassung
Die antimikrobielle Wirkung der bereits 1859 von A.W.von Hofmann [1] erstmals aus Vogelbeeröl hergestellten Sorbinsäure wurde unabhängig voneinander 1939 in Deutschland von E. Müller [2] und nur wenige Monate später in den USA von C. M. Gooding [3] gefunden. Von Mitte der 50er Jahre an steht Sorbinsaure aus industrieller Produktion zur Verfügung. Seitdem wird sie in steigendem Umfang in aller Welt zur Lebensmittelkonservierung benutzt. Sie wird besonders wegen ihrer physiologischen Unbedenklichkeit und ihrer organoleptischen Indifferenz anderen Konservierungsstoffen mehr und mehr vorgezogen.
