Zusammenfassung
Jahrhundertelang wurde Salpeter in der Lebensmittelkonservierung benutzt [1]. Erst seit 1899 weiß man, daß grundsätzlich nicht Salpeter das eigentlich wirksame Agens ist, sondern das aus ihm auf mikrobiologischem Wege gebildete Nitrit [2]. Weil die Umwandlung von Nitrat zu Nitrit weitgehend unkontrolliert erfolgt, bevorzugt man seitdem mehr und mehr die direkte Anwendung von Nitrit. Es wurde zunachst als solches unter der Bezeichnung „Stangensalpeter“ angewendet, heute jedoch in den meisten Ländern nur in Abmischung mit Kochsalz in bestimmten, oft gesetzlich festgelegten Verhältnissen. Im Hinblick auf die toxikologischen Eigenschaften der durch Nitrit möglicherweise gebildeten Nitrosamine und des Nitrits selbst wird dessen weitere Verwendung in der Lebensmittelkonservierung neuerdings stärker in Frage gestellt.
