Zusammenfassung
Proteine kann man, entsprechend ihrer Funktion, in drei Kategorien einteilen:

Spezifische Katalysatoren: Enzyme.

Strukturproteine: z.B. das Collagen — in Sehnen und Bindegewebe; das Keratin — Bestandteil von Haut und Haar; das Hüllprotein des Tabakmosaikvirus — Bestandteil eines Viruspartikels.

3.
Antikörper: spezifische Abwehrstoffe des Körpers gegen makromolekulare Fremdstoffe (Vorkommen: bei Wirbeltieren).
