Zusammenfassung
Vitamine sind lebensnotwendige organische Wirkstoffe, die dem tierischen Organismus regelmäßig mit der Nahrung in calorisch unbedeutenden Mengen fertig oder in Form leicht in diese überführbarer Vorstufen — als Pro-vitamine — zugeführt werden müssen. Im Stoffwechsel können sie nicht oder nur in unzureichenden Mengen gebildet werden. Die Vitamine fungieren im Zellstoffwechsel als Katalysatoren und Fermentbausteine. Der Vitamincharakter einer Verbindung gilt nicht gleichermaßen für alle tierischen Organismen. Einzelne Tiere können bestimmte dieser Substanzen selber in ausreichenden Mengen bilden. Der Vitaminbegriff ist daher nicht nur durch die Funktion im Stoffwechsel, sondern in erster Linie durch die Unfähigkeit ausreichender Eigenproduktion definiert.
