Zusammenfassung
Die Leber ist das bevorzugte Organ des physiologischen Chemikers. Wenner wissen will, was mit einer Substanz im intermediären Stoffwechsel geschieht, dann bietet er sie zuerst der Leber an und nur, wenn diese mit ihr nichts anzufangen weiß, wendet er sich an andere Organe. Durch solche Versuche haben wir erfahren, daß die Leber sehr viele und mannigfaltige chemische Reaktionen ausführt, und es erscheint fast unmöglich, sie unter einem einheitlichen Gesichtspunkt zu ordnen. Sie ist reich an Fermenten und eine ähnliche Fundgrube für Vitamine wie die Hefe.
