Zusammenfassung
Pepsin ist im Magensaft aller Wirbeltiere vorhanden. Das Enzym wird von der Fundusdruse in der Magenschleimhaut als Pepsinogen gebildet. Diese inaktive Vorstufe des Pepsins wandelt sich bei pH 4,6 autokatalytisch in die aktive Form um.
