Zusammenfassung
β-Glucosidase findet sich in der Natur in vielen Pflanzensamen. Das Enzym wurde als „Emulsin “ in süßen Mandeln entdeckt; auch heute noch wird es hauptsächlich aus Mandeln gewonnen. Später allerdings stellte sich heraus, daß es sich bei „Emulsin “ um ein Gemisch verschiedener Enzyme handelt. β-Glucosidase kommt außerdem noch in einigen Hefen, Aspergillus- und Trichoderma-Arten sowie in Bakterien vor (2).
