Zusammenfassung
Fast jeder neue Gedanke in der Naturwissenschaft hat mehr oder weniger anerkannte Entstehungszentren. Im Laufe der Zeit wird durch Versuch und reinigende Kritik eine Summe neuer Erkenntnisse schließlich dadurch zur Lehre, daß sie alle in einen ursächlichen Zusammenhang gebracht werden. Diese Entwicklung hat auch die Vitaminlehre genommen. Schon 1720 hat der österreichische Militärarzt Kramer das Wesen des Skorbuts in dem Fehlen frischer Gemüse und Fruchtsäfte in der Nahrung erkannt, und zahlreiche Ärzte haben in der Folgezeit die darauf begründete „antiskorbutische Therapie“ getrieben. In ihren Ursachen nicht erkannte Fehlschläge bei dieser Behandlung haben dann dazu beigetragen, die Entstehung des Skorbuts durch Mangel an frischen pflanzlichen Stoffen zu leugnen. Man ist immer mehr dazu übergegangen, Teilerscheinungen der Krankheit zu klären und hat damit den großen Gedanken bald vergessen. Ähnlich wie mit Skorbut ist es mit anderen Erkrankungen gegangen, die heute wohl allgemein als Avitaminosen angesprochen werden können. Wenn auch in zahlreichen ernährungsphysiologischen Studien von Forster, Eijkmann, Lunin, Hopkins, Stepp, Holst und Frölich u.a. auf die Bedeutung nicht rein calorisch wirkender Stoffe hingewiesen wurde, hat das Verdienst bei diesen äußerlich verschiedensten Krankheitsformen eine ursächliche Einheit — das Fehlen eines Stoffes, der, ohne selbst Nahrungsstoff, in kleinsten Mengen für die Ernährung notwendig ist (Hofmeister) — erkannt oder vermutet zu haben in erster Linie Funk (1), auf den ja auch die Bezeichnung Avita- minose zurückgeht.
