Structure-Activity Relationships of Several Trypsin and Chymotrypsin Inhibitors from Legume Seeds

Abstract

The presence of protein-like trypsin inhibitors in legume seeds is by now a well established fact. Different legume seeds contain one or more inhibitors. Most of them have a molecular weight of about 8000 with a high concentration of cystine (~ 20%) and no free SH groups.
