Zusammenfassung
Unter Gemüse (von mittelhochdeutsch „muos“ — Breispeise) versteht man solche Teile von Pflanzen, die im rohen, gekochten, zubereiteten oder haltbargemachten Zustand vorwiegend als Beikost zu den Hauptmahlzeiten verzehrt werden. Bei Gemüsen handelt es sich im Gegensatz zu Obst immer um Pflanzenteile, bei denen der Gehalt an Zucker und Fruchtsäure nicht für den Geschmacksund Genußwert maßgebend ist und die im Gegensatz zu den Gewürzen nicht wegen ihres Gehaltes an ätherischen Ölen in Mischung mit anderen Lebensmitteln verwendet werden. Der Begriff Gemüse ist von der Zubereitungsart abhängig. Pflanzenteile, die sowohl als Gemüse als auch als Gewürz verwendet werden können, sind immer dann als Gemüse anzusprechen, wenn sie dazu bestimmt sind, als gesonderte Bestandteile im verzehrsfertigen Gericht hervorzutreten. Die Gemüsearten umfassen im Gegensatz zu den Obstgewächsen, die weitgehend Holzpflanzen sind, meist ein-, seltener zweijährige Pflanzen.
