Zusammenfassung
Die Gruppe der Kohlenhydrate umfaßt eine große Zahl von Stoffen, die im tierischen wie im pflanzlichen Organismus in erheblicher Menge vorkommen und sehr verschiedene Funktionen zu erfüllen haben. Wie alle organischen Bausteine der lebendigen Substanz werden die Kohlenhydrate im pflanzlichen Organismus unter Ausnutzung der Energie des Sonnenlichtes aufgebaut. Ihre Synthese in der Pflanze ist Voraussetzung für den Aufbau aller anderen Naturstoffe. Der nicht zu derartigen Synthesen verbrauchte Teil der Kohlenhydrate dient zu einem Teil in Form der Cellulose dem pflanzlichen Organismus als Gerüstsubstanz. Der Rest wird als Energiespeicher in besonderen Teilen der Pflanze, meist den Wurzeln oder Knollen, aber auch in den Samen abgelagert. Derartige Energiespeicher sind z. B. Stärke und einige analog gebaute Stoffe. In wieder anderer Form finden sich Kohlenhydrate als einfache Zucker in Blüten, Früchten und auch in anderen Pflanzenteilen. Ein Teil der pflanzlichen Kohlenhydrate ist für die Ernährung von Mensch und Tier als Energiequelle von wesentlichster Bedeutung.
