Zusammenfassung

Der Zeitpunkt der Ernte bedeutet insofern eine wichtige Zäsur im Leben der Früchte, als von da an die Stoffeinlagerung und die Wasserzufuhr in das bis dahin immer noch wachsende Fruchtgewebe aufhört. Andererseits wird aber dadurch der Lebensfaden nicht einfach durchschnitten, sondern es führt auch der in den Lagerraum verbrachte Apfel oder die Birne immer noch ein selbständiges Dasein als ein Organismus, der atmet, von seinen Reserven zehrt und so lange in seinem Innern einen komplizierten Stoffumwandlungsprozeß durchführt, bis schließlich ein Überaltern eintritt, das sich meistens darin äußert, daß die Frucht trotz aller Vorsichtsmaßnahmen das Opfer einer Fäulnispilz-attacke wird.
