Das Schlucken ist ein außerordentlich komplexer Vorgang, der anfangs willkürlich, dann reflektorisch abläuft. Es werden drei Phasen des Schluckens unterschieden: Die erste, bukkale Phase, kann weitgehend willkürlich gesteuert werden, die darauf folgenden, pharyngeale und ösophagale Phasen, aber nicht mehr.
