Zusammenfassung
In zunehmendem Maße werden von uns und anderen Autoren in den letzten Jahren Hautreaktionen offensichtlich allergischer Natur beobachtet, deren Aufklärung auf Schwierigkeiten stößt. Wir vermuteten deshalb, daß in Nahrungs- und Genußmitteln enthaltene Allergene als Ursache in Frage kommen. Auf der Suche nach allergenpotenten Bestandteilen in unseren Nahrungs- und Genußmitteln sind wir — sowie schon andere — auf eine derartige Fülle von Möglichkeiten gestoßen, daß sich ein Überblick rechtfertigt mit dem Ziel, diesen Allergenquellen in Zukunft mehr Aufmerksamkeit zu schenken.
