Zusammenfassung
Alternative Ernährungformen sind gewöhnlich durch eine gewisse Einschränkung des Konsums tierischer Produkte gekennzeichnet. Vor allem für Kinder besteht daher die Befürchtung, daß ein Mangel an gewissen Nährstoffen auftreten könnte. Seit 1966 sind in den Vereinigten Staaten und europäischen Ländern Gutachten von verschiedenen Gremien (z.B. American Medical Association 1971; National Research Council 1974; American Dietetic Association 1975; American Academy of Pediatrics 1977) sowic Fallberichte (z.B. Higginbottom et al. 1978; Heinrich et al. 1979; Roberts et al. 1979; Sklar 1986; Stolhoff u. Schulte 1987) erschienen, in denen streng vegetarische Ernährungsformen als riskant für Kleinkinder charakterisiert wurden. Aufgrund dieser Informationen fand ab 1981 in den Niederlanden eine Reihe von Studien mit alternativ ernährten Kindern statt. Die Ergebnisse dieser Studien werden hier zusammengefaßt; der interessierte Leser wird auf das Literaturverzeichnis verwiesen (eine ausführliche Übersicht bieten Dagnelie et al. 1994). Die erste Untersuchung war eine Querschnittstudie über Ernährung, Körpergröße und -gewicht alternativ ernährter Kinder im Alter von 1–3 Jahren (Van Staveren et al. 1985). Begutachtet wurden 4 Gruppen: laktovegetarisch, anthroposophisch und makrobiotisch ernährte Kinder sowie eine üblich ernährte Kontrollgruppe. Die laktovegetarisch und anthroposophisch ernährten Kinder waren etwas kleiner und leichter als die in der Kontrollgruppe. Die Versorgung mit Vitamin D und resorbierbarem Eisen war knapp, während die Mengen an Fett, Cholesterin und Oligosacchariden den niederländischen Empfehlungen besser entsprachen als die der Kontrollgruppe. Dagegen waren die makrobiotisch ernährten Kinder wesentlich kleiner und leichter als die 3 sonstigen Gruppen, und ihre Versorgung mit Vitamin B2, Kalzium und resorbierbarem Eisen war relativ niedrig. Die Vitamin-B12-Versorgung wurde in dieser Studie nicht ausgewertet.
