Zusammenfassung

Die Ernährungstherapie der Fettstoffwechselstörungen richtet sich nach der Entstehung und dem Abbau der Lipoproteine, deren Konzentration im Serum erhöht oder erniedrigt ist. Als Ursachen kommen genetische Defekte und/oder Ernährungsfehler in Frage. Die Ernährungstherapie ist die Basis der Behandlung von Fettstoffwechselstörungen. Für die Intensität der Ernährungstherapie sind nicht allein Cholesterin- oder Triglyceridwerte im Serum entscheidend, sondern die Lipoproteinkonstellation (VLDL, IDL, LDL, HDL) und das individuelle Risikoprofil des Patienten, das heißt, die Berücksichtigung weiterer Risikofaktoren einschließlich der Familienanamnese.
