Ätherische Öle sind ölartige, leicht flüchtige Pflanzeninhaltsstoffe mit charakteristischem Geruch und Geschmack, die als Produkte dissimilatorischer Stoffwechselvorgänge im Cytoplasma pflanzlicher Zellen gebildet werden. Von ca. 300 untersuchten Pflanzenfamilien enthalten mehr als 30% ätherische Öle.
