Abstract

Softening is common to various processes that include ripening, several physiological disorders, changes due to pathological attack, wilting of flowers and, in a sense, also abscission. Chemically, these processes have in common, changes to pectic substances which comprise one of the main groups of compounds that make up cell walls.
