Zusammenfassung

Die Nahrungsaufnahme und der Ernahrungszustand sind im Gesamtkomplex Ernahrung zwei wesentliche Komponenten zur Charakterisierung und Beurteilung der Ernahrungs- situation eines Individuums, einer Bevolkerungsgruppe und/oder eines ganzen Volkes. Letztendlich resultiert aus dem tatsachlichen Lebensmittelverzehr und der damit verbun- denen Energie- und Nahrstoffaufnahme in Relation zum ernahrungsphysiologischen Be-darf der entsprechende Ernahrungszustand. Er ist wiederum ein wesentlicher Teil des Ge- sundheitszustandes (Abb. 123).
