Abstract

EXAFS studies of the calcium environments in polysaccharides have provided important insights into chain conformation and gel formation. Work on Ca2+ poly(α-D-galacturonate) in solid and gel forms ana on solid Ca2+ oligo(α-L-guluronate) is reviewed, with particular emphasis on the need to choose appropriate models mimicking well defined Ca-O bond distributions. The difference in environment for the solids provides the first structural evidence that Ca2+-polysaccharide interactions are sufficiently stereospecific as to participate in the control of gelation and other biologically important processes.
