Abstract

Sus scrofa, the Eurasian wild pig, was, after the sheep (8,500 B.C.) and dog (8,400 B.C.),the first animal ever domesticated. The earliest archeological source which was found in Cayönü in Turkey and dates back to about 7,000 B.C., tells us that the human race regarded Sus scrofa as a domestic animal. In the Oriental as well as the Western world, the pig has become one of man’s most important nutritional resources. Despite the fact that there is large range of various sorts of meat, 760 million pigs are consumed annually. Europeans eat 30–40 kg pork per person per year.
