Anthocyane bedingen die rote, violette bzw. blaue Färbung von Blüten und anderen Pflanzenteilen. Sie liegen als Glykoside des Flavens (2-Phenyl-chromen) vor. Bei saurer Spaltung der Anthocyane gehen die entstehenden Anthocyanidine in Flavyliumsalze über.
