Zusammenfassung

Jede Polypeptidkette faltet sich zu einer spezifischen, dreidimensionalen Struktur, der Tertiärstruktur. Erst in diesem energetisch günstigsten Zustand entfaltet das Protein seine katalytische Aktivität. So mühsam die Aufklärung der Primärstruktur eines Proteins auch sein mag (siehe vorangegangenes Kapitel), so wenig kann man aus der Primärstruktur über die Funktion eines Proteins aussagen. Zur Aufklärung der Tertiärstruktur bedient man sich der Röntgenstrukturanalyse, doch sie ist nur dann einsetzbar, wenn Kristalle des betreffenden Proteins zur Verfügung stehen.
