Zusammenfassung

Unter dem Sammelbegriff Kohlenhydrate faßt man Naturstoffe zusammen, welche ihrem chemischen Aufbau nach primäre Oxidationsprodukte mehrwertiger Alkohole (Polyhydroxyaldehyde und Polyhydroxyketone) darstellen; auch strukturell ähnlich gebaute Stoffe, insbesondere solche, deren Carbonyl reduziert oder oxidiert ist, sowie substituierte Derivate, werden in die Stoffgruppe mit einbezogen.
