Zusammenfassung
Beim Verzehr von Lebensmitteln können primäre und sekundäre Hygiene-Risikofaktoren eine gesundheitliche Gefährdung des Menschen hervorrufen (Tab. 3.1.–1). In Mitteleuropa dominieren die sekundären Hygiene-Risikofaktoren, die im allgemeinen erst bei höheren Keimgehalten in Lebensmitteln zu Vergiftungserscheinungen führen. Sie lassen sich durch Maßnahmen begrenzen, die auf eine Wachstumshemmung der pathogenen bzw. toxischen Mikroorganismen hinzielen. Einige Mikroorganismen, die beim Verderb durch hohe Vermehrungsraten wirksam werden können, sind in Abb. 3.1.–1 aufgeführt. Für die Haltbarmachung sind physikalische, chemische und biologische Verfahren entwickelt worden (Tab. 3.1.–2).
