Abstract

Liver is the major organ in the control of the metabolic and nutritional homeostasis. Indeed, it plays a determinant role in all main macronutrient pathways, i.e. carbohydrates, lipids and proteins [1]. It is also implicated in micronutrient metabolism: vitamins and trace elements. Due to several specific and high metabolic capacities, liver is also involved in the metabolism and excretion of many exogenous compounds or toxic substances. This chapter focuses on a brief review of some of the main features of liver metabolism and on the relationships between liver diseases and nutritional status and support.
