Zusammenfassung
Ethanol und alkoholische Getränke haben unterschiedliche Wirkungen auf die Magensäuresekretion. Während 1,4-4 Vol.-% reiner Ethanol nur eine ca. 20%ige Stimulation der Magensäure verursachen, haben höhere Konzentrationen (5-40 Vol.-%) keinen oder eher einen hemmenden Effekt. Alkoholische Getränke, die durch reine alkoholische Gärung entstehen (z.B. Bier, Wein und Champagner), stimulieren die Magensäuresekretion nahezu maximal. Destillationsprodukte (z.B. Whisky und Cognac) stimulieren die Säuresekretion nicht. Neuere Untersuchungen haben überraschenderweise gezeigt, dass es sich bei den maximal die Magensäure stimulierenden Inhaltsstoffen um die Dicarboxylsäuren Bernsteinsäure und Maleinsäure handelt; die während der alkoholischen Gärung entstehen.
