Zusammenfassung
Dass die Technologie der Cassavaverarbeitung in diese Folge aufgenommen wurde, obwohl der Anteil der industriellen Verarbeitung zumindest z.Zt. noch verhältnismäßig niedrig ist, hat folgende Gründe: Die Cassavawurzel (Pfeilwurzel, Manihot esculenta Crantz) ist weltweit nach Reis, Mais und Zuckerrohr bzw. der Zuckerrübe die wichtigste Energiequelle für die menschliche Ernährung. Etwa 700 Mio. Menschen decken 1000 bis 4000 kJ ihres täglichen Energiebedarfs davon, vor allem die Bevölkerung in den ärmsten Entwicklungsländern. Da die Weltbevökerung besonders in solchen Ländern eine hohe Zuwachsrate aufweist, dürfte Cassava als wichtige Nahrungsquelle weitere Bedeutung erlangen. Etwa 20% des asiatischen Anbaus wird zudem als billige Kohlenhydratquelle für Viehfutter nach Westeuropa exportiert.
