Zusammenfassung
Stärke, das polymere Depot-Kohlenhydrat von Pflanzen, ist aus a-D(+)-Glucose-Einheiten aufgebaut. Je nach der Art der glucosidischen Bindungen unterscheidet man zwischen Amylose und Amylopektin als den hochmolekularen Grundbausteinen des Stärkekorns. Das Verhältnis Amylose/Amylopektin ist charakteristisch für die einzelnen Stärkearten. Als Stärkezucker bezeichnet man alle Produkte, die man im technischen Maßstab durch Hydrolyse von Amylose und Amylopektin unter Bildung von Glucosepolymeren mit beliebigen Polymerisationsgraden (Poly-, Oligo-, Disaccharide) bis hin zum Grundbaustein a-D-Glucose (andere Bezeichnung: Dextrose) gewinnt. Wegen der großen Variationsbreite in der Kohlenhydratzusammensetzung und in anderen funktionellen Eigenschaften (z. B. Süße, Viskosität) haben Stärkezucker als Sirupe, getrocknete oder kristalline Produkte vielfältige Einsatzmöglichkeiten bei der Herstellung von Lebensmitteln gefunden.
