Zusammenfassung
Nahrung, die wir aufnehmen, wird im Körper metabolisiert und die verwertbaren Anteile in Energie oder Biomasse umgesetzt. So gelangt Protein in die Muskulatur oder das Gehirn bzw. in eine Vielzahl von Zellen, während Fett als Energiequelle gespeichert oder auch in verschiedene Gewebe eingebaut wird. Kohlenhydrate liefern in Form von Glucose ebenfalls eine energiereiche Verbindung. Alle diese Nährstoffe hinterlassen einen Fingerabdruck, den wir untersuchen können: von den Aminosäuren, die wir in Form von Proteinen aufgenommen haben, wird der Stickstoff in Knochen und Knorpel eingelagert, von den Kohlenhydraten ist es der Kohlenstoff, der sich ebenfalls in Knochen, Knorpel und den Zähnen wiederfindet.
