An Innovation in the Italian Milk Filiére: The Case of High Quality Liquid Milk

Summary

In the report is emphasized that the “High Quality Milk” results from an evolutive process of the dairy products’ filière. This process, without solution of continuity, started from the breeders to reach the final market. Besides the changes of the productive structure, the evolution in progress mostly reflects the ones occurred in the operators’ mentality. This change points out that the various operators of the filière are approaching the market and are inclined to better exploit the “poor” raw material, that is the milk, that our breeders are able to produce. This is done within the limits of the various forms of vertical integration and following a logic of cooperation-competition.
