Zusammenfassung
Aus tierexperimentellen Arbeiten ist bekannt, daß sich die Enzymsekretion der Bauchspeicheldrüse an die in der Nahrung langfristig vorherrschende Nährstoffkomponente anpaßt. Bei kohlenhydratreicher Ernährung wurde ein Anstieg der Amylaseaktivität und bei eiweißreicher Kost eine Erhöhung der Aktivität proteolytischer Enzyme im Pankreassaft beobachtet. Zum Einfluß einer fettreichen Ernährung wurden widersprüchliche Befunde erhoben. Auf welchem Wege die Adaptation der Pankreasenzymsekretion an die Diät zustandekommt, ist bisher nicht bekannt. Neben Veränderungen im Pankreas selbst ist aufgrund neuerer Untersuchungen, in denen eine selektive Sekretion einzelner Pankreasenzyme beobachtet wurde, auch eine veränderte Pankreasstimulation als Ursache zu diskutieren. Es war deshalb das Ziel unserer Untersuchung festzustellen, welchen Einfluß Diäten mit extremer Nährstoffrelation auf die hormonale Stimulierbarkeit des Pankreas und auf seien Sekretionsantwort haben.
