Zusammenfassung
Die phenolischen Inhaltsstoffe der Pflanzen sind von außerordentlicher Vielfalt und in Nutzpflanzen weit verbreitet. Eine Reihe ihrer Vertreter besitzt eine beträchtliche Bedeutung in Praxis und Wissenschaft. Zahlreiche Pflanzenphenole gehören anderen wichtigen Stoffklassen an, z.B. Aminosäuren (Tyrosin, Dihydroxyphenylalanin), Aminen (u. a. Hordenin in Gerstenkeimlingen und 5-Hydroxytryptamin in Obst und Gemüse), besonders aber den ätherischen Ölen und Gerbstoffen. Diese Phenole werden daher, soweit sie für Lebensmittel wichtig sind, an den betreffenden Stellen bereits besprochen. Häufig liegen Pflanzenphenole als Glykoside, z. B. Arbutin (Hydrochinonglucosid) der Birnen und Ericaceen, vor und sind daher im allgemeinen in dein Beitrag „Kohlenhydrate, Glykoside“ zu behandeln. Die einfacher gebauten Phenolcarbonsäuren, die zum Teil in Pflanzen weit verbreitet vorkommen, z. B. p-Hydroxy-benzoesäure, Vanillinsäure, Gentisinsäure, Protocatechusäure, Gallussäure, sind dem Kapitel „Organische Säuren, Ester, Carbonylverbindungen und seltener vorkommende Alkohole“ vorbehalten. Pflanzenphenole, die für Lebensmittel noch weitgehend ohne Interesse sind, z. B. Lignane, Chromane, Xanthone, Anthrachinone, Anthrone, Anthranole, Phenolalkaloide usw., können hier ebenfalls nicht berücksichtigt werden. Über Chemie und Vorkommen der wichtigeren Pflanzenphenole kann gegebenenfalls bei W. Karrer (1958) nachgelesen werden.
