Abstract
Unter Zusatzstoffen werden hier Stoffe oder Stoffgemische verstanden, die Lebensmitteln aus ernährungsphysiologischen oder technologischen Gründen zugesetzt werden, ohne selbst Hauptinhaltsstoffe zu sein. Meist verbleiben Zusatzstoffe oder ihre Folgeprodukte im Lebensmittel. In manchen Fällen werden sie aber auch im Laufe eines Prozesses wieder entfernt. Die folgenden Beispiele sollen auf einige wichtige Anwendungsgebiete von Zusatzstoffen hinweisen: • Nährwert. Zur Hebung des Nährwertes dienen z.B. Zusätze von Vitaminen, Mineralstoffen, Aminosäuren, Aminosäurederivaten. Die Herstellung von Lebensmitteln für bestimmte diätetische Zwecke kann den Einsatz weiterer Zusatzstoffe (Dickungsmittel, Emulgatoren, Süßstoffe) erfordern.
