Abstract
Produkte aus Getreide gehören zu den wichtigsten Grundnahrungsmitteln des Menschen. In den Industriestaaten werden speziell durch den Konsum von Brot etwa 50% des Kohlenhydratbedarfs, 30% des Proteinbedarfs und 50–60% des Bedarfs an B-Vitaminen gedeckt. Außerdem leisten Getreideerzeugnisse zur Versorgung mit Mineralstoffen und Spurenelementen einen sehr wesentlichen Beitrag.
